Game Stew with Pickled Mushrooms, by Ola Cedell
All good things at once! Here in the north we have the advantage of being able to indulge in a lot of game during the autumn season, here we have chosen deer. The stew has been simmering with root vegetables in many hours, until the sauce is rich and tasty and the meat falls apart. For the stew we serve pickled mixed mushrooms which gives a lovely acid to the hearty stew. As another accessory we propose baked Jerusalem artichokes or celery instead of the usual potato. The stew is made with advantage the day before, put cold overnight and boil again before serving. Pickled cranberry is also a beautiful, tart Accessory! The photo was taken using studio strobes, main light from behind.
