Swedish Silver Dollar Pancakes, by Ola Cedell
Swedish silver dollar pancakes (mini pancakes) feels a little more adult than pancakes! These are thinner than American, but a little thicker than French. Suitable for both breakfast, brunch, snacks and dessert, they serve with berries and a really good maple syrup. The mini pancakes can be easily done both gluten and lactose free. If you do not own a silver dollar pancake pan, muffin pan could also be used. Try different varieties of flour and seasonings for different tastes, it is possible for example to flavor pancakes with vanilla, lemon and cardamom. Served preferably freshly made! The photo was taken using studio strobes, main light from behind. Maple syrup was not only for taste also to create high light by reflecting the light, the blue berry to make it more interesting.
