Saffron Brioches, by Ola Cedell
In Sweden saffron is one of the main Christmas ingredients. Most commonly use is the ‘lussekattten’, a regular wheat dough with saffron but where the shape of the bun is the characteristic ‘8’. Saffron is very expensive per kilogram but still pretty cheap as flavor & colorist, given the small amount that is use. Here I have instead made in the shape of a ‘cupcake’, freshly baked and magically good! Eat as it is or with a dollop of jam and cream. The photo was taken using studio flash, main light from above and behind and fill-flash from back-right. The red and green in the background to get some Christmas feel.
