Potato and Zucchini Pie
Written by Kanti Ananta Nuzhat
An Australian friend once served me a veggie pie. It was delicious. We sat together, chatted for hours and laughed our hearts out until we realized we had finished the whole pie. Since then I make this pie whenever I want to cherish friendship or have some special time with my family. I forgot the exact recipe that she shared, but I tried to recreate it using my imagination and from the taste that I remembered.
One can prepare this dish very quickly with readily available ingredients in the refrigerator. It’s quick and very healthy. This very light vegetable pie can be served during any occasion to celebrate with friends and family.
I hope you all will try this and enjoy the taste of melted parmesan cheese with every bite.
