Green Cardamom
(Cardamomo Verde, Grüner Kardamom, Verde Cardamomo, Grīna ilāyacī or Sabuja ēlāca)
Native to India, Sri Lanka, Borneo, Sumatra and Malaysia, Green Cardamom is a cool spice with a distinctly minty aroma with a warm, spicy-sweet flavor. Once the seeds are exposed or ground, they quickly lose their flavor. That is why they are best when stored in pod. When using its shell is usually lightly crushed and the pod and seeds are added to the dish for flavor.
